Ingredients
- 1 cup cooked lentils
- ½ cup fine bulgur, soaked
- 2 onions, sliced and caramelized
- 1 cup parsley + mint, chopped
- 1 lemon + 3 tbsp olive oil + 1 tsp cumin
- 1 tomato, diced
- Pomegranate seeds
Method
- Caramelize the onions slowly until deep and jammy — they carry the whole salad (this is mujadara territory).
- Toss the cooked lentils and soaked bulgur with most of the onions.
- Dress with lemon, olive oil, cumin, and plenty of salt while still warm so it soaks in.
- Fold in the herbs and tomato and top with the rest of the onions and pomegranate seeds.
