Method

  1. Caramelize the onions slowly until deep and jammy — they carry the whole salad (this is mujadara territory).
  2. Toss the cooked lentils and soaked bulgur with most of the onions.
  3. Dress with lemon, olive oil, cumin, and plenty of salt while still warm so it soaks in.
  4. Fold in the herbs and tomato and top with the rest of the onions and pomegranate seeds.
