Miso-Glazed Salmon with Sesame Rice

Ingredients
- 12 oz Salmon
- 3 tbsp white miso
- 1 tbsp mirin or honey
- 1 tbsp soy sauce
- 1 tsp grated ginger
- 2 cups Broccoli
- 1½ cups short-grain rice, cooked
- 1 tbsp toasted sesame seeds
- 2 scallions, sliced
Method
- Whisk miso, mirin, soy, and ginger into a glaze. Slather it over the Salmon and let it sit while the broiler heats.
- Broil the Salmon on a lined tray, 6 inches from the element, 6–9 minutes — the glaze should bronze and blister but not blacken. Watch it like it owes you money.
- Steam or blanch the Broccoli until vivid and just tender; toss with a pinch of salt and half the sesame seeds.
- Serve over rice, scattered with scallions and the rest of the sesame. Spoon any tray juices over the top — that's free flavor.
