  1. Whisk miso, mirin, soy, and ginger into a glaze. Slather it over the Salmon and let it sit while the broiler heats.
  2. Broil the Salmon on a lined tray, 6 inches from the element, 6–9 minutes — the glaze should bronze and blister but not blacken. Watch it like it owes you money.
  3. Steam or blanch the Broccoli until vivid and just tender; toss with a pinch of salt and half the sesame seeds.
  4. Serve over rice, scattered with scallions and the rest of the sesame. Spoon any tray juices over the top — that's free flavor.
