Brazilian Fish Moqueca

Ingredients
- 1 lb firm white fish, in chunks
- 1 Bell Pepper + 1 onion, sliced
- 3 tomatoes, sliced
- 1 can (14 oz) coconut milk
- 3 cloves garlic + 1 lime
- 2 tbsp palm oil (or olive) + 1 tsp paprika
- Cilantro, rice
Method
- Marinate the fish in lime, garlic, and salt while you build the stew.
- Layer the onion, Bell Pepper, and tomato in a pot with the oil and paprika, and soften 10 minutes.
- Nestle the fish in, pour the coconut milk around it, and simmer gently 10–12 minutes — don't stir hard or the fish breaks.
- Shower with cilantro and a final squeeze of lime; serve with rice.
