Method

  1. Marinate the fish in lime, garlic, and salt while you build the stew.
  2. Layer the onion, Bell Pepper, and tomato in a pot with the oil and paprika, and soften 10 minutes.
  3. Nestle the fish in, pour the coconut milk around it, and simmer gently 10–12 minutes — don't stir hard or the fish breaks.
  4. Shower with cilantro and a final squeeze of lime; serve with rice.
