Skillet Moussaka with Lamb

Ingredients
- 12 oz ground Lamb
- 1 eggplant, diced
- 1 onion + 3 cloves garlic
- 1 cup crushed tomatoes
- 1 tsp cinnamon + 1 tsp oregano
- ½ cup Greek yogurt + 1 egg + ½ cup feta (topping)
- Olive oil
- Parsley
Method
- Brown the diced eggplant in olive oil until soft and golden; set aside. In the same skillet, brown the Lamb with onion and garlic.
- Add cinnamon, oregano, and tomatoes and simmer into a thick ragù. Fold the eggplant back in and level the top.
- Whisk yogurt, egg, and feta; spread over the meat.
- Bake at 400°F for 20 minutes until the top is set and golden. Rest, then finish with parsley.
