Method

  1. Brown the diced eggplant in olive oil until soft and golden; set aside. In the same skillet, brown the Lamb with onion and garlic.
  2. Add cinnamon, oregano, and tomatoes and simmer into a thick ragù. Fold the eggplant back in and level the top.
  3. Whisk yogurt, egg, and feta; spread over the meat.
  4. Bake at 400°F for 20 minutes until the top is set and golden. Rest, then finish with parsley.
