Method

  1. Fry the shallot-garlic paste in oil until fragrant and no longer raw, 2 minutes. Add the Chicken Thighs and cook through.
  2. Push aside, add the cold rice, and fry hard, breaking up clumps and letting it catch a little on the pan.
  3. Drizzle in the kecap manis and sambal and toss until every grain is glossy and mahogany.
  4. Plate with a crisp-edged fried egg on top, cucumber, fried shallots, and a wedge of lime.
