Ingredients
- 3 cups cold cooked rice
- 8 oz Chicken Thighs
- 3 tbsp kecap manis (sweet soy)
- 1 tbsp sambal or chili paste
- 3 shallots + 3 cloves garlic, blended to a paste
- 2 eggs, fried crisp
- Cucumber, fried shallots, lime
Method
- Fry the shallot-garlic paste in oil until fragrant and no longer raw, 2 minutes. Add the Chicken Thighs and cook through.
- Push aside, add the cold rice, and fry hard, breaking up clumps and letting it catch a little on the pan.
- Drizzle in the kecap manis and sambal and toss until every grain is glossy and mahogany.
- Plate with a crisp-edged fried egg on top, cucumber, fried shallots, and a wedge of lime.
