Ingredients
- 12 oz cooked Poached Shrimp, chopped into chunky pieces
- 3 tbsp mayonnaise
- 1 celery stalk, finely diced
- 1 tbsp lemon juice, plus wedges
- 1 tbsp chopped chives
- 2 split-top buns
- 2 tbsp butter, softened
- Salt and black pepper
Method
- Fold the Poached Shrimp with the mayonnaise, celery, lemon juice, chives, a pinch of salt, and a grind of pepper — dressed, not drowned; the seafood is the headline.
- Chill the filling while you deal with the buns; a cold filling against a warm roll is the entire experience.
- Butter the outsides of the buns and griddle them in a skillet over medium heat until golden on both flat sides, about 2 minutes per side.
- Stuff the warm buns past the point of good manners, add a last squeeze of lemon, and serve with chips.
