Ground Beef Kjøttkaker in Brown Gravy

Ingredients
- 1 lb Ground Beef
- 3 tbsp breadcrumbs
- ⅓ cup milk
- 1 egg
- ½ tsp ground nutmeg
- ¼ tsp ground ginger
- 3 tbsp butter
- 3 tbsp flour
- 2 cups beef stock
- 1½ cups Green Peas
- Boiled potatoes, for serving
Method
- Soak the breadcrumbs in the milk, then mix with the Ground Beef, egg, nutmeg, ginger, salt, and pepper until sticky. Shape into 6 large, slightly flattened cakes.
- Brown the cakes in 1 tablespoon of the butter, 2–3 minutes per side, then set aside — they finish in the gravy.
- Make the sauce in the same pan: melt the remaining butter, brown the flour to the color of hazelnuts, then whisk in the stock until glossy.
- Return the kjøttkaker and simmer, covered, 12–15 minutes until cooked through to 160°F (71°C) and the gravy has soaked into their seams.
- Warm the Green Peas in salted water, mash them roughly with a fork and a knob of butter, and serve alongside with potatoes.
