Plukkfisk — Salt Cod & Potato Mash with Onions

Ingredients
- 1 lb Salt Cod, cooked and flaked
- 1½ lb potatoes, boiled and roughly crushed
- 2 Onions, sliced thin
- 4 tbsp butter
- ¾ cup whole milk
- 4 slices bacon, chopped
- 2 tbsp chopped chives
- White pepper and salt
Method
- If using salt cod, soak it 24 hours in cold water, changing the water three or four times, then poach gently 10 minutes and flake. Fresh or leftover cooked fish needs none of that.
- Render the bacon in a wide pan over medium heat until crisp, then lift it out and leave the fat behind.
- Cook the Onions in the bacon fat with 1 tbsp of the butter until soft and golden at the edges, 10 minutes.
- Add the crushed potatoes, the flaked Salt Cod, the milk, and the remaining butter. Fold gently over low heat — plukkfisk means picked fish, and big flakes are the point, so stop before it becomes a purée.
- Season with white pepper and salt to taste, then scatter the bacon and chives over. Serve with flatbread and pickled beets.
