  1. Crisp the potato wedges in half the oil in your widest pan, 15 minutes, turning until golden-edged and tender. Remove.
  2. Sear the Pork Shoulder hard in the rest of the oil until browned and cooked through (145°F + rest for pork).
  3. Add the onion petals and garlic for the final 4 minutes — they should char at the edges, staying half-crisp.
  4. Reunite the potatoes, dust everything with the spices, and toss 2 minutes.
  5. Serve straight from the pan, showered with cilantro (and pomegranate if using). Ojakhuri means family — the pan hits the table, the forks negotiate the rest.
