Ingredients
- 1½ lb Pork Shoulder, in chunky pieces
- 2 lb potatoes, in wedges
- 2 red onions, in petals
- 4 cloves garlic
- 1 tsp coriander + ½ tsp fenugreek or curry powder + chili flakes
- 3 tbsp oil
- Big handful cilantro + pomegranate seeds if you're feeling Tbilisi
Method
- Crisp the potato wedges in half the oil in your widest pan, 15 minutes, turning until golden-edged and tender. Remove.
- Sear the Pork Shoulder hard in the rest of the oil until browned and cooked through (145°F + rest for pork).
- Add the onion petals and garlic for the final 4 minutes — they should char at the edges, staying half-crisp.
- Reunite the potatoes, dust everything with the spices, and toss 2 minutes.
- Serve straight from the pan, showered with cilantro (and pomegranate if using). Ojakhuri means family — the pan hits the table, the forks negotiate the rest.
