Ingredients
- 2 cups flour
- 3 eggs
- 2½ cups milk
- ½ tsp salt
- Butter, for the pan
- Toppings, choose your faction: bacon + syrup (sweet-savory classic), apple + cinnamon, cheese, or plain syrup 'stroop'
Method
- Whisk the flour, eggs, milk, and salt into a thin, pourable batter — thinner than American pancake batter, thicker than crêpe. Rest 10 minutes.
- Heat a large pan with butter and pour a ladleful, swirling to cover the WHOLE pan — pannenkoeken are plate-sized by law of custom.
- If doing bacon or apple: lay them in the pan first, pour the batter over, and they cook INTO the pancake — the Dutch integration policy.
- Cook 2 minutes until golden underneath, flip with courage, 1 minute more.
- Stack and serve rolled or flat with syrup. In the Netherlands this is also dinner, which is the kind of policy that builds national happiness.
