Paprikás Krumpli — Paprika Potato Stew

Ingredients
- 2 lb potatoes, thick-sliced
- 8 oz Sausage, sliced into coins
- 1 onion, diced
- 1 Bell Pepper, sliced
- 2 tbsp sweet paprika
- 2 tbsp lard or oil
- 2½ cups water or stock
- 1 tomato, chopped
- Salt and caraway pinch
Method
- Soften the onion in the fat until golden, 6 minutes. Pull the pot off the heat and stir in the paprika — thirty seconds off-flame, always.
- Return to heat with the tomato, Bell Pepper, and Sausage; fry 3 minutes until the fat runs orange.
- Add the potatoes and enough water to barely cover. Season with salt and caraway.
- Simmer gently, mostly covered, 20–25 minutes until the potatoes are tender and the broth has thickened from their starch into a loose paprika gravy.
- Rest 5 minutes and serve in bowls with bread. Peasant food by origin, comfort royalty by result — Hungary runs on this.
