Ingredients
- 6 oz flat rice noodles
- 10 oz Steak, sliced paper-thin
- 6 cups beef or vegetable stock
- 1 onion and 3-inch ginger, charred
- 3 star anise, 1 cinnamon stick, 2 cloves
- 2 tbsp fish sauce
- Thai basil, cilantro, bean sprouts, lime
- Sliced chili and hoisin/sriracha
Method
- Char the halved onion and ginger directly over a flame until blackened — this smoky depth is what makes pho taste like pho.
- Simmer the stock with the charred aromatics and whole spices for 25 minutes, then strain and season with fish sauce.
- Soak the noodles in hot water until pliable; divide into bowls with the raw thin-sliced Steak (or cooked tofu).
- Pour the screaming-hot broth over to cook the meat on contact. Serve with the herb-and-lime platter to build your own.
