Portuguese Piri-Piri Chicken Thighs

Ingredients
- 1½ lb Chicken Thighs
- 3 red chilies + 4 cloves garlic
- 1 tsp smoked paprika
- 3 tbsp red wine vinegar + 3 tbsp olive oil
- 1 lemon
- Fries or rice, and greens
Method
- Blend the chilies, garlic, paprika, vinegar, oil, lemon, and salt into a loose piri-piri sauce. Reserve half for serving.
- Coat the Chicken Thighs in the other half and marinate at least 15 minutes (longer is better).
- Grill or roast at 425°F, basting, until charred and cooked through, 25–30 minutes.
- Drench in the reserved sauce and serve with fries and greens. Keep napkins close.
