Method

  1. Blend the chilies, garlic, paprika, vinegar, oil, lemon, and salt into a loose piri-piri sauce. Reserve half for serving.
  2. Coat the Chicken Thighs in the other half and marinate at least 15 minutes (longer is better).
  3. Grill or roast at 425°F, basting, until charred and cooked through, 25–30 minutes.
  4. Drench in the reserved sauce and serve with fries and greens. Keep napkins close.
