Ingredients
- 1 baguette, halved lengthwise and crosswise
- 10 oz Button Mushrooms, sliced
- 1 small onion, diced
- 2 tbsp butter
- 1½ cups shredded gouda or mozzarella
- 3 tbsp ketchup
- 2 scallions, sliced
- Salt and black pepper
Method
- Heat the oven to 425°F (220°C). Sauté the Button Mushrooms and onion in butter over medium-high until browned and the pan is dry again, 6–8 minutes; season well.
- Pull a little bread from the cut faces of the baguette to make shallow boats.
- Pile the Button Mushrooms mixture onto the bread and blanket with cheese all the way to the ends — bare corners burn.
- Bake 8–10 minutes until the cheese bubbles and the crust crackles.
- Zigzag with ketchup, scatter scallions, and eat it the traditional way: too hot, standing outside.
