Ingredients
- 1 lb potatoes, in small even dice
- 8 oz Sausage, diced
- 1 onion, diced
- 3 tbsp butter
- 4 eggs
- Pickled beets, the classic sidekick
- Chives
Method
- Fry the potatoes in half the butter over medium-high, tossing occasionally, until golden and tender, 12 minutes. Even dice = even crisp; Swedes take the knife work seriously.
- Push aside, add the rest of the butter, and fry the onion and Sausage until browned, 5 minutes. Combine and season well.
- Fry the eggs sunny-side up in a second pan — the yolk is the sauce.
- Plate the hash with an egg riding on top and pickled beets alongside — their sweet-sour cuts the richness like it was hired to.
- Scatter chives and serve. Any leftover becomes tomorrow's pyttipanna, which is the whole philosophy: nothing dies, everything gets fried.
