Ingredients
- 8 oz Chorizo, crumbled or diced
- 3 cups grated melting cheese (Oaxaca, Monterey Jack, mozzarella)
- 1 Bell Pepper, diced
- ½ onion, diced
- 1 jalapeño, sliced
- Flour tortillas or chips
- Cilantro
Method
- Brown the Chorizo in an ovenproof skillet until crisped and its fat runs (160°F for chorizo); add the Bell Pepper, onion, and jalapeño for 3 minutes. Spoon off excess fat, leave the flavor.
- Kill the heat, scatter the cheese evenly over everything.
- Broil 3–5 minutes until molten, blistered, and bubbling at the edges — watch it; broilers escalate.
- Rush to the table in the skillet with a warning about the handle everyone will ignore.
- Scoop with tortillas, dragging cheese-pulls of Chorizo up with each pass, cilantro over the top. It's not a dip, it's an event with a spoon.
