Ingredients
- 5 eggs
- 3 cups shoestring potato sticks (or thin-fried potato matchsticks)
- 4 oz ham, in strips (optional)
- ½ onion, sliced
- 2 tbsp butter
- Parsley, chopped
- Black pepper
Method
- Soften the onion in the butter; add the ham strips (if using) until warmed and edged.
- Beat the eggs loosely — streaky is right for a revuelto.
- Add the potato sticks to the pan, then IMMEDIATELY the eggs over them, folding gently — the goal is soft egg curds binding still-crisp potatoes; speed protects the crunch.
- Stop while glossy and slightly loose; it finishes on the walk to the table.
- Pepper hard, parsley over. Porteños argue about whether it's breakfast, lunch, or 3am food. The answer is yes.
