Roti John — Malaysian Omelette Sandwich

Ingredients
- 2 soft baguette halves, split lengthwise
- 4 eggs
- ½ lb ground meat or extra egg, cooked (optional)
- ½ onion, minced
- 1 chili, minced
- 2 tbsp butter
- Sauce: mayo + sriracha + a squeeze of ketchup
- Cucumber slices
Method
- Whisk the eggs with the onion, chili, cooked meat if using, and a pinch of salt.
- Melt butter in a wide pan over medium. Pour in HALF the egg mixture in the shape of your bread.
- Now the move that makes it roti john: press the bread cut-side DOWN into the wet egg and let them fuse as it sets, 2 minutes.
- Flip the whole bonded unit and crisp the bread side in the butter, 2 minutes. Repeat for the second sandwich.
- Slather with the spicy-sweet sauce, add cucumber, close, and cut into hand-width pieces. Named, allegedly, after a request to make 'roti for John' — whoever John was, he ate well.
