Ingredients
- 2 lb potatoes, boiled for mash
- 3 cups Cabbage, shredded
- 1 leek or onion, sliced
- 4 tbsp butter
- 1 cup grated cheddar
- Salt, pepper, chive handful
Method
- Mash the potatoes with half the butter, properly seasoned.
- Soften the Cabbage and leek in the remaining butter until silky with golden edges, 8 minutes.
- Fold vegetables into mash with half the cheese — the 'rumble'. The 'thump' is optional but encouraged.
- Pile into a baking dish, rough up the top with a fork, and crown with the rest of the cheese.
- Bake at 400°F (205°C) 20 minutes until bronzed and bubbling. Serve as lunch with a salad or beside sausages — Borders farmhouse thrift that outlived the farms.
