Method

  1. Sear the Paneer cubes in ghee until golden on the edges; set aside (this keeps them from disappearing into the sauce).
  2. Soften the onion, garlic, and ginger, bloom the spices, then add the tomato and cook to a paste.
  3. Stir in the puréed spinach and a splash of water; simmer 10 minutes so it loses the raw edge, then swirl in the cream.
  4. Fold the Paneer back in to warm through and serve with rice or naan.
