- 6 oz feta, sliced thick
- 2 large flatbreads or lavash
- 2 cups mixed fresh herbs — mint, basil, tarragon, cilantro — left whole
- ½ cup walnuts
- 1 cucumber, in sticks
- 4 radishes, halved
- Optional: dates or grapes on the side
Method
- Arrange everything on a board like the Persian spread it is: bread, cheese slab, herb mountain, walnuts, crunchy vegetables.
- Build each bite or roll a full wrap: bread, a swipe-crumble of feta, a fistful of WHOLE herbs (no chopping — leaves are the salad), walnuts pressed in.
- Add cucumber and radish for the cold crunch against the salty cheese.
