Miso-Butter Salmon Traybake with Broccoli

Ingredients
- 2 salmon fillets
- 4 cups Broccoli
- 2 tbsp white miso + 2 tbsp softened butter + 1 tsp honey
- 1 tbsp soy sauce
- 1 tsp grated ginger
- Sesame seeds and scallion
- Rice, to serve
Method
- Mash the miso, butter, honey, and ginger into a paste. Heat the oven to 425°F.
- Toss the Broccoli with a little oil and soy on a sheet pan and roast 8 minutes to give it a head start.
- Push the veg aside, add the salmon, and smear each fillet with the miso butter. Roast 10–12 minutes until the salmon flakes and the glaze bronzes.
- Scatter sesame and scallion and serve over rice with the pan juices spooned on top.
