Miso-Butter Salmon Traybake with Broccoli

Method

  1. Mash the miso, butter, honey, and ginger into a paste. Heat the oven to 425°F.
  2. Toss the Broccoli with a little oil and soy on a sheet pan and roast 8 minutes to give it a head start.
  3. Push the veg aside, add the salmon, and smear each fillet with the miso butter. Roast 10–12 minutes until the salmon flakes and the glaze bronzes.
  4. Scatter sesame and scallion and serve over rice with the pan juices spooned on top.
