Sambal Green Beans with Rice

Ingredients
- 1 lb green beans, trimmed
- 2 tbsp sambal (or sriracha + 1 tsp fish sauce)
- 3 cloves garlic, minced
- 1 shallot, sliced
- 1 tsp sugar
- 2 tbsp neutral oil
- 2 cups cooked jasmine rice
- Fried egg, to top (optional)
Method
- Get a wok or wide skillet properly hot, add the oil, and throw in the beans. Let them blister and char in spots, tossing occasionally, 4–5 minutes — the wrinkly char is flavor, not damage.
- Push the beans aside, drop the heat to medium, and fry the garlic and shallot 60 seconds until golden.
- Add the sambal and sugar and stir 30 seconds — frying the chili paste in oil wakes it up in a way stirring it in never will.
- Toss everything together with a splash of water until the beans are glossed in brick-red sauce.
- Serve over rice, crowned with a crispy fried egg if you're wise. Sweat is seasoning.
