Ingredients
- 1 cup rolled oats
- 2 cups stock or water
- 2 eggs
- 2 big handfuls Spinach
- 2 tbsp grated parmesan
- 1 tbsp butter or olive oil
- 1 tsp soy sauce
- Chili flakes and black pepper
Method
- Lower the eggs into boiling water for exactly 7 minutes, then into cold water. Peel — the yolks should be jammy, not chalky.
- Simmer the oats in stock 5–7 minutes until creamy. Stir in the Spinach to wilt, then the parmesan, butter, and soy sauce.
- Season with black pepper — be generous — and chili flakes.
- Bowl it up and crown with the halved jammy eggs.
