Method

  1. Pound the cutlets between plastic to an even ¼-inch — thin is what makes a proper schnitzel.
  2. Season, then bread: flour, egg, breadcrumbs, pressing lightly.
  3. Shallow-fry in plenty of oil over medium-high, swirling the pan so the crust puffs and lifts away from the meat, 2–3 minutes a side until deep gold.
  4. Drain, hit with salt, and serve with lemon, parsley, and potatoes.
