Ingredients
- 2 thin cutlets of Pork Shoulder (pork or chicken)
- ½ cup flour, 2 eggs, 1½ cups breadcrumbs
- Neutral oil for shallow frying
- 1 lemon
- Parsley
- Potato salad or buttered potatoes to serve
Method
- Pound the cutlets between plastic to an even ¼-inch — thin is what makes a proper schnitzel.
- Season, then bread: flour, egg, breadcrumbs, pressing lightly.
- Shallow-fry in plenty of oil over medium-high, swirling the pan so the crust puffs and lifts away from the meat, 2–3 minutes a side until deep gold.
- Drain, hit with salt, and serve with lemon, parsley, and potatoes.
