Herring Fillets Fried in Oatmeal

Ingredients
- 1 lb Herring Fillets, butterflied
- 1 cup medium oatmeal
- 1 egg, beaten
- 3 tbsp bacon fat or butter
- 1 lemon, in wedges
- 2 tbsp chopped parsley
- Salt and black pepper
Method
- Season the oatmeal well with salt and pepper and spread it on a plate.
- Pat the Herring Fillets dry, brush with the beaten egg, and press both sides firmly into the oatmeal so it takes on a thick, even coat.
- Heat the fat in a heavy skillet over medium-high until it shimmers but does not smoke.
- Fry skin side first, 3 minutes, without touching it, then flip and cook 2 minutes more, until the oats are toasted brown and the flesh is opaque at 145°F (63°C).
- Drain briefly on a rack and serve with lemon, parsley, and buttered toast. Oatmeal-crusted fish waits for no one — eat it hot.
