Method

  1. Bring the water and milk just to a simmer in a heavy pot, then rain in the oats, stirring as you pour so no clumps form.
  2. Add the salt now, not at the end — it seasons the grain as it swells instead of sitting on top.
  3. Simmer gently 8–10 minutes, stirring often (tradition says clockwise, with a wooden stick called a spurtle; your spoon will not offend the oats).
  4. You're done when it's thick enough to hold a trail from the spoon but still pours lazily. It firms further off the heat, so stop one notch looser than you want.
  5. Serve in warm bowls with your chosen finish. Cold cream poured around the edge is the classic — hot porridge, cold cream, one perfect contrast.
