Ingredients
- 1 cup rolled oats (or steel-cut for the purists, +10 minutes)
- 2 cups water
- 1 cup milk or oat milk
- Generous pinch of salt — non-negotiable in Scotland
- To finish: cream, brown sugar, honey, or berries — start the argument yourself
Method
- Bring the water and milk just to a simmer in a heavy pot, then rain in the oats, stirring as you pour so no clumps form.
- Add the salt now, not at the end — it seasons the grain as it swells instead of sitting on top.
- Simmer gently 8–10 minutes, stirring often (tradition says clockwise, with a wooden stick called a spurtle; your spoon will not offend the oats).
- You're done when it's thick enough to hold a trail from the spoon but still pours lazily. It firms further off the heat, so stop one notch looser than you want.
- Serve in warm bowls with your chosen finish. Cold cream poured around the edge is the classic — hot porridge, cold cream, one perfect contrast.
