Method

  1. Soften the leek and garlic in olive oil, add cumin and coriander, then pile in the Spinach and cook down until silky, 6–8 minutes.
  2. Season well and spread the greens flat. Make wells and crack in the eggs.
  3. Crumble feta around the eggs, cover, and cook until whites set but yolks stay soft, 5–6 minutes.
  4. Finish with lemon and eat straight from the pan with flatbread.
