Green Shakshuka with Spinach

Ingredients
- 4 eggs
- 6 big handfuls Spinach
- 1 leek, sliced
- 3 cloves garlic
- 1 tsp cumin, ½ tsp coriander
- ½ cup feta
- 3 tbsp olive oil
- Warm flatbread, lemon
Method
- Soften the leek and garlic in olive oil, add cumin and coriander, then pile in the Spinach and cook down until silky, 6–8 minutes.
- Season well and spread the greens flat. Make wells and crack in the eggs.
- Crumble feta around the eggs, cover, and cook until whites set but yolks stay soft, 5–6 minutes.
- Finish with lemon and eat straight from the pan with flatbread.
