Ingredients
- 4 eggs
- 1 can (14 oz) crushed tomatoes
- 3 cloves garlic, sliced
- 1 tsp chili flakes
- 3 tbsp olive oil
- ¼ cup grated parmesan
- Basil and crusty bread
Method
- Sizzle the garlic and chili in olive oil until fragrant, then add the tomatoes, season, and simmer 8 minutes until thickened.
- Make wells and crack in the eggs. Cover and cook 5 minutes until whites set but yolks stay runny.
- Shower with parmesan and basil.
- Serve straight from the pan with charred bread for dragging through the sauce.
