Ingredients
- 1 lb ground Lamb
- 1 onion + 2 carrots, diced
- 1 cup peas
- 2 tbsp tomato paste + 1 tbsp worcestershire
- 1 cup stock + 1 sprig thyme
- 2 lb potatoes, mashed with butter
- ½ cup grated cheddar
Method
- Brown the Lamb with the onion and carrot, then stir in the tomato paste and worcestershire and cook 2 minutes.
- Add stock and thyme and simmer until saucy but not soupy; fold in the peas. Season boldly.
- Spread into a dish, top with the buttery mash, and rough up the surface with a fork so it crisps.
- Scatter cheddar and bake at 400°F for 25 minutes until golden and bubbling at the edges.
