Ingredients
- 1 can (15 oz) chickpeas, drained
- 3 tbsp mayo or tahini
- 1 tbsp dijon mustard
- 1 tbsp capers, chopped
- ½ cup Celery, finely diced
- ¼ red onion, minced
- Handful dill or parsley
- 4 slices good bread, toasted
- Lettuce and tomato, for stacking
Method
- Smash the chickpeas with a fork until about half are broken — texture is the point, paste is the enemy.
- Fold in mayo, dijon, capers, Celery, onion, and herbs. Season boldly with salt and pepper; underseasoned chickpeas are just sad beige.
- Taste. It probably wants more lemon, mustard, or salt. Trust your tongue — you have one.
- Stack on toasted bread with lettuce and tomato. Press gently, halve, eat over the sink like a professional.
