Croquetas de JamóN Serrano — Crisp Outside, Molten Inside

Ingredients
- 5 oz JamóN Serrano, very finely chopped
- 6 tbsp butter
- ¾ cup all-purpose flour
- 2½ cups whole milk, warmed
- 1 small onion, grated
- ¼ tsp grated nutmeg
- 2 eggs, beaten
- 1½ cups fine breadcrumbs
- ½ cup flour, for dredging
- 4 cups neutral oil, for frying
- Salt and white pepper
Method
- Melt the butter and cook the grated onion until translucent but not colored, 4 minutes. Whisk in the flour and cook it 3 full minutes — raw flour is the number one croqueta failure.
- Add the warm milk a ladle at a time, whisking hard and letting each addition fully absorb before the next. You are building a béchamel so thick it pulls away from the pan in a single mass.
- Cook 10 minutes more over low heat, stirring constantly, then fold in the JamóN Serrano, nutmeg, salt, and white pepper. Spread into an oiled dish, press plastic wrap directly onto the surface, and chill at least 3 hours until firm as cold butter.
- Scoop tablespoons of the paste, roll into small logs, then run each through flour, egg, and breadcrumbs. Double-coat any that look thin — a breach means a blowout in the oil.
- Heat 2 inches of oil to 350°F (175°C) and fry in batches of six for 2–3 minutes, until evenly bronzed. Crowding drops the temperature and gives you greasy croquetas.
- Drain on a rack and rest 2 minutes. The inside is genuinely lava; warn whoever grabs the first one.
