Steak Frites with Herb Butter

Ingredients
- 2 steaks (ribeye or sirloin)
- 2 large potatoes, cut into fries
- 4 tbsp butter, softened
- 1 clove garlic + parsley + chives (for the butter)
- Neutral oil
- Flaky salt and black pepper
- Green salad, to serve
Method
- Mash the softened butter with minced garlic and herbs; chill. Toss the fries in oil and salt and roast at 425°F until deep gold and crisp, ~25 minutes, flipping once.
- Pat the steaks bone-dry and season aggressively. Sear in a screaming-hot pan, 3–4 minutes a side for medium-rare (130°F).
- Rest the steaks 5 minutes — cutting early spills all the juice you worked for — with a slice of herb butter melting on top.
- Serve with the fries and a sharp green salad to cut the richness.
