Method

  1. Mash the softened butter with minced garlic and herbs; chill. Toss the fries in oil and salt and roast at 425°F until deep gold and crisp, ~25 minutes, flipping once.
  2. Pat the steaks bone-dry and season aggressively. Sear in a screaming-hot pan, 3–4 minutes a side for medium-rare (130°F).
  3. Rest the steaks 5 minutes — cutting early spills all the juice you worked for — with a slice of herb butter melting on top.
  4. Serve with the fries and a sharp green salad to cut the richness.
