  1. Cook the grated tomato in the oil with the oregano, sugar, and salt until the water cooks off and it turns thick and jammy, 8–10 minutes. This reduction is the dish — wet tomato makes soggy eggs.
  2. Beat the eggs and pour into the tomato jam over LOW heat.
  3. Fold slowly until barely set and creamy — strapatsada lands softer than a scramble, looser than an omelette.
  4. Kill the heat while it still shines.
  5. Crumble the feta over and serve with toast. Greek grandmothers make this when the garden overflows; canned tomatoes make it when it doesn't.
