Ingredients
- 1 lb Chicken Thighs
- 8 small corn tortillas
- 1 tbsp cumin
- 1 tbsp smoked paprika
- ½ tsp chipotle or cayenne
- 2 limes
- ½ white onion, minced
- Big handful cilantro, chopped
- 2 tbsp neutral oil
- Salsa of your allegiance
Method
- Rub the Chicken Thighs with cumin, paprika, chipotle, salt, and the juice of half a lime. Even 10 minutes of marinating pays rent.
- Cook in a screaming-hot oiled pan (or grill) until charred at the edges and just cooked through. Rest 5 minutes, then chop into taco-size pieces.
- Warm tortillas over a flame until puffed and spotted. Stack them in pairs — structural integrity matters.
- Build: Chicken Thighs, onion, cilantro, salsa, lime. Nothing else. Street tacos are minimalism you can eat.
