Method

  1. Brown the Ground Beef with the onion and spices, then fold in the rice and half the tomatoes. Taste and season boldly — the filling seasons the whole pepper.
  2. Stand the peppers in a baking dish and pack the filling in. Spoon the rest of the tomatoes around them and add a splash of water.
  3. Cover with foil and bake at 375°F for 30 minutes, until the peppers are tender.
  4. Uncover, top with cheese, and bake 10 more minutes until melted and bronzed. Finish with parsley.
