Ground Beef-Stuffed Peppers

Ingredients
- 4 bell peppers, tops cut and seeded
- 12 oz Ground Beef
- 1 cup cooked rice
- 1 onion, diced
- 1 cup crushed tomatoes
- 1 tsp cumin + 1 tsp oregano
- 1 cup grated cheese
- Parsley, olive oil
Method
- Brown the Ground Beef with the onion and spices, then fold in the rice and half the tomatoes. Taste and season boldly — the filling seasons the whole pepper.
- Stand the peppers in a baking dish and pack the filling in. Spoon the rest of the tomatoes around them and add a splash of water.
- Cover with foil and bake at 375°F for 30 minutes, until the peppers are tender.
- Uncover, top with cheese, and bake 10 more minutes until melted and bronzed. Finish with parsley.
