Ingredients
- 5 eggs
- 4 oz ground pork
- 2 tsp fish sauce
- 4 scallions, thinly sliced
- ¼ tsp black pepper
- 2 tbsp neutral oil
- 1 tsp sugar
- Steamed rice and sliced cucumber, for serving
- Sriracha or chile sauce, to taste
Method
- Brown the pork in a teaspoon of the oil over medium-high, breaking it into small crumbles, until the edges crisp, about 4 minutes.
- Whisk the eggs with fish sauce, sugar, pepper, and scallions, then stir in the warm pork.
- Wipe the pan, add the remaining oil, and get it properly hot — a drop of egg should puff on contact. Pour in the mixture and let it billow at the edges without touching it for 2 minutes.
- Flip in one brave motion (or slide onto a plate and invert) and cook 1–2 minutes more until deep gold and lacy. Serve draped over rice with cucumber and a stripe of sriracha.
