Pampushky — Garlic Pull-Apart Rolls

Ingredients
- 3 cups bread flour
- 1 cup warm milk
- 2¼ tsp instant yeast
- 1 tbsp sugar
- 1 tsp salt
- 3 tbsp sunflower oil
- 1 egg, beaten, for the wash
- 5 cloves garlic, crushed
- 3 tbsp chopped parsley
Method
- Mix the flour, warm milk, yeast, sugar, salt, and 2 tbsp of the oil into a soft dough and knead 8 minutes until smooth and slightly tacky. Rise covered until doubled, about 1 hour.
- Divide into 12 pieces, roll each into a tight ball, and nestle them just touching in a round pan. Rise again 30 minutes, until puffed and shy of doubled.
- Brush with the beaten egg and bake at 375°F (190°C) for 20–22 minutes, until deep gold and hollow-sounding underneath.
- While they bake, stir the garlic and parsley into the remaining oil with 2 tbsp water and a pinch of salt.
- Spoon the garlic oil over the rolls the second they come out of the oven, while they can still drink it. Pull apart at the table and dunk in anything red.
