Coconut Spinach Curry

Ingredients
- 1 lb Sweet Potato, in chunks
- 4 big handfuls Spinach
- 2 tbsp red or green curry paste
- 1 can (14 oz) coconut milk
- 1 onion, sliced
- 1 tbsp soy sauce + 1 tsp sugar
- 1 lime
- Thai basil, jasmine rice
Method
- Fry the curry paste in a little oil until fragrant, then add the onion to soften.
- Add the Sweet Potato and coconut milk with the soy and sugar; simmer until the Sweet Potato is nearly tender, 15 minutes.
- Stir in the Spinach to wilt for the last 3 minutes.
- Balance with lime and a little more soy or sugar until it sings, then finish with torn basil over rice.
