Ingredients
- 1 lb pizza dough, in 4 balls (honest shortcut again)
- 1 lb Ground Beef
- 1 onion + 2 cloves garlic
- 2 tbsp curry powder
- 1 tbsp apricot jam or chutney
- 1 tomato, chopped
- ½ cup peas
- Oil for frying
Method
- Fry the dough balls in 350°F oil, turning, 5–6 minutes until puffed, deep gold, and hollow-sounding — vetkoek means 'fat cake' and apologizes to no one.
- Brown the Ground Beef with the onion and garlic (160°F for beef).
- Add the curry powder for 1 minute, then the tomato, jam, peas, and a splash of water; simmer into a thick, sweet-spiced mince.
- Split the warm vetkoek like buns.
- Stuff generously with the curried mince. Eaten across South Africa from school gates to soccer stands — crisp shell, cloud interior, curry heart.
