Ingredients
- 8 oz halloumi, in thick slabs
- 4 cups watermelon, in big cubes, COLD
- Big handful mint + a little basil
- ½ red onion, sliced paper-thin
- 2 tbsp olive oil + 1 tbsp lime juice + pinch of chili flakes
- Flaky salt
- Toasted pita alongside
Method
- Sear the halloumi in a dry hot pan, 2 minutes per side, to a deep golden crust — it should squeak hot and salty.
- Arrange the cold watermelon on a platter with the onion.
- Lay the hot halloumi over the cold fruit immediately — the temperature clash is the dish.
- Whisk the oil, lime, and chili; drizzle over everything.
- Mint, basil, flaky salt, done. Salt-sweet, hot-cold, squeaky-juicy — three contradictions per forkful, all of them summer.
