Ingredients
- 2 cups grated sharp cheddar
- 4 thick slices bread
- 1 tbsp butter + 1 tbsp flour
- ⅓ cup dark ale or milk
- 1 tsp mustard + 1 tsp worcestershire
- 1 egg yolk
- Chives
Method
- Make a quick roux with butter and flour, whisk in the ale, then melt in the cheddar with the mustard and worcestershire into a thick, glossy sauce. Off the heat, beat in the yolk.
- Toast the bread until sturdy.
- Spread the cheese mixture thick to the very edges and broil until blistered, bubbling, and bronzed.
- Scatter chives and eat immediately, while it's molten.
